To turn DoH off in your firefox:
Open the 'Menu' > click on 'preferences' > in general tab go to 'Network Settings' > and click on 'settings' : untick the Enable DNS over HTTPs checkbox.
Also
Type about:config in the browser address bar.
Empty the variables:
network.trr.uri
network.trr.credentials
network.trr.bootstrapAddress
Search for:
network.trr.mode and set a value of 5 to completely disable it.
Now you'r free from chinese spy agencies ...

EDIT: A french blog report that completely disable network.trr.mode can break the browser and the browser could no longer resolve domain names.
